Did you know that aubergine is a fruit and not a vegetable? But it is used as a vegetable. Aubergine is native to Southeast Asia, but is grown all over the world, and there are many different varieties. One of my favorite aubergine dishes is melanzane parmigiana, but this stew with lentils is very good too! Do you like aubergine?
Aubergine Linsgryta
1 röd lök, finhackad
1 aubergine, tärnad
2 dl röda linser
1 burk krossad tomat (400 g)
3 dl vatten
0,5 buljongtärning
kanel
paprika
salt
svartpeppar
Stek lök och aubergine i en kastrull med lite olja. Tillsätt linser, tomat, vatten och buljongtärning och låt sjuda i 20-30 minuter. Krydda efter smak.

1 red onion, finely chopped
1 aubergine, diced
2 dl red lentils
1 can crushed tomato (400 g)
3 dl water
0.5 broth cube
cinnamon
pepper
salt
black pepper
Fry onion and aubergine in a small saucepan with a little oil. Add lentils, tomato, water and broth cube and let simmer for 20-30 minutes. Season to taste.
