Chocolate, chocolate, mmmm :) I like chocolate and preferably dark chocolate, which is good to eat a few squares of every day. When I made the frosting it got crumbly and it is probably because I used a blend of 85% and 70% chocolate. But the frosting could be saved by adding in a dash of hot coffee (another hot liquid can be used) and mixing it with a hand blender. If you make this cake I would recommended using a 50% chocolate. And the cream should not boil. A very filling and delicious cake to serve with coffee / tea.
Chokladkaka med Chokladglasyr
ca 10 bitar
4 msk starkt hett kaffe (jag hade espresso)
65 g smör
1 dl kokossocker
1,5 dl vetemjöl
1 msk kakaopulver
1 tsk bakpulver
1 ägg
0,5 dl mandelmjölk
glasyr
0,5 dl grädde
75 g mörk choklad
10 g smör
Lägg smöret i det heta kaffet och låt smälta. Blanda kokossocker, mjöl, kakaopulver och bakpulver i en skål. Tillsätt smör-kaffeblandningen. Rör sedan i ägget och mjölken. Häll smeten i en bakplåtspappersklädd bakform (18cm). Grädda i 175 C graders ugn i 15 minuter. Låt kakan svalna.
Värm grädden i en kastrull till glasyren. Bryt chokladen i bitar och lägg ner dem och smöret i kastrullen. Rör om tills allt smält. Låt smeten svalna något. Häll den över kakan och bred ut.

4 tbsp of strong hot coffee (I used espresso)

1 dl coconut sugar
1.5 dl flour
1 tbsp cocoa powder
1 tsp baking powder
1 egg
0.5 dl almond milk
frosting
0.5 dl cream
75 g dark chocolate
10 g butter
Add the butter in the hot coffee and let melt. Mix coconut sugar, flour, cocoa powder and baking powder in a bowl. Add butter-coffee mixture. Stir in the egg and milk. Pour the mixture into a parchment paper covered baking tin (18cm). Bake in 175 C degree oven for 15 minutes. Let the cake cool.
For the frosting heat the cream in a saucepan. Break the chocolate into pieces and put them and the butter into the saucepan. Stir until all is melted. Leave to cool slightly. Pour over the cake and spread.
